INTRODUCING KIM'S CORNER
Kim’s Corner ---- Maiden Voyage
Hey out there all you fellow foodies!
This is the first time I’ve ever “blogged” so you’re going to have to
bear with me. My name is Kim Bryson, and
I am the chef here at the winery running Le Grand Cru Bistro and Catering. I am classically French trained and have
worked in various higher end restaurants in the metro area since the mid
nineties. I took a break from cooking
last year to work in the tasting room here, and then spent last harvest season
as the winemaker’s assistant (I know the inside of those tanks like the back of
my hand). Then this opportunity to run
the bistro was offered to me by Cindi and Skip and I jumped at it. Since my background was in the French
technique, I used to cook a lot of food that was very technical and complicated,
but over the years I have learned that the food I enjoy the most is very simple. Find good ingredients, treat them simply,
and let them shine. I’ll be back with you
next month and we’ll really start talking about food. Ciao |
